I dislike consumables for ships. For players yes, but not ships. The blocks basically are the consumables already. Just look at how many you lose when your ship is completely destroyed!
Stack size is infinite. The biggest problem with the block based blueprint system is that you can't see whether all the blocks used in the ship fit in your inventory before you sctually try to load it. So if someone decided to dismantle their ship with the intention of buying it again later...
Making players buy ships with blocks generally is a bad idea. Because if your inventory can't hold all the blocks the ship is made of, the ship can't be bought.
May I suggest checking the wiki. All the blocks have their official description (keep in mind that some don't have a description), there is some information on general stuff, and the crafting system is fully explained.
We already have more galaxies, they just don't show up in the map and they are extremely buggy.
Edit: Wait... 5000? I only ever play on 2000! Does this mean that we are getting more asteroids per sector now?
In the latest dev build planets just are rare. So don't be surprised when you only find one planet. There should at least be a few more planets per system, yes, but not higher than 4 per system. "Normal" should be 2 planets planets per system. 1 and 3 planets should be rarer, and 0 and 4 should...
The hyperdrive with the capital ship systems is still being looked at, and nothing is certain. The devs said they'd heard what we though, and that they would think about it more.
The reason the speed limit is in place is because strange things start happening when you go to fast. Above 150 km/h (although I think they meant 150 m/s) you start to be able to fly through other objects. At 300 physics start breaking down. And at 1000, well, the universe might as well explode.
I think there needs to be a way to conquer an entire galaxy, and then have that galaxy only count as one system in terms of cost.
