How do you hide the GUI in the newest release?

Tab now enables the radial menu and Tab-G no longer works for hiding the GUI/HUD. Is there a different way to hide the GUI/HUD or has that ability been removed from the game?

Also: what about the old F1 screen that I used to use to see how fast my chain drive would charge up. Since the move from TAB to F1 I haven't been able to find it.
