    Would you want bigger sectors?

that is why we have starsystems
Well, as Miow22 says, your post needs to be a bit more informative, I'll just work with what I have.
The main reason is sectors are the "base" when it comes to navigation and star systems are way too large for that kind of thing. No-one asks what star system someone is in. They ask what sector they are in. By increasing the sector size, this "base unit" seems like a bit more of a landmark or checkpoint, so to speak. It would also be great for navigation, as showing objects on a sector-by-sector basis would make a bit more sense as currently it uses a set radius because sectors are too small for that.

"I feel like sectors should be something that makes players feel like they've entered a whole new section of space, instead of being small cubes where they simply flick by while travelling."

The primary issue with having bigger sectors (iirc), is that the bigger they are, the memory consumption they place on the computer increases exponentially.

But surely that would be compensated for by less sectors?

Yup, you already load multiple sectors AFAIK
Unless you want to only be able to interact with or see things only in that one sector, you need sectors to be smaller. Computers generally cannot handle the memory requirements of a much larger sector PLUS loading its adjacent ones as well.

Having "less sectors" in the universe doesn't really make sense (if you interpret it that way) because there are already an infinite amount of sectors, and they are also unloaded unless you are right next to one.

Sector numbers arent determined by sector size, theyre determined by the java integer limit. There is ~2.14 billion sectors in every direction (2^29791 sectors total). On topic tho, at the moment a 6x6x6 cube of sectors is loaded around each player, changing this to a 3x3x3 radius and having sectors be twice as large wouldnt reduce performace that much I would have thought. It would also mean less sector changes, and they cause little lag spikes as they are at the moment.

Yep; sector borders cause all sorts of odd issues; the less of them we have the better.
