You can use "fire at selected" to get turrets to turn towards asteroids, but this requires a constant logic clock keeping the salvagers on the turret running, so I wouldn't really recommend it, unless you like constant salvage beams spraying off your ship.

You can only have 5 ships actively following you, but you can assign tasks to as many as you want.
