The addition of focused AI targeting (pins) and the cockpit controls are starting to crowd the available keys for controlling various parts of the game. The AI pin button is the same as the Rotate Clockwise button for ships, the change fire mode bind is the same as the free-look camera bind, etc. Can we please have the option of unbinding certain controls, especially since some of them can sometimes be redundant (roll left/right can be substituted with LCTRL, which turns left and right on the mouse into rolling, which I use more often than Z/X). This is currently not possible by any means. Removing the input from the config file simply results in it being rebound to the last closest available keybind.

The option to unbind keys is certainly what I would expect from a game with this many keybinds. I can't see that being too hard to implement, either. =/

Aside from that, I'm assuming you can assign any controls unused by yourself to an obscure key like Scroll Lock.

I have more a problem of remembering all the different keys.
Ofc I want strafe, ofc I want roll, ofc I want acceleration, but that are 18 directions/keys (or 14 with 2 rolls bound to the mouse axis).

The best solution would be hotswitching Multiple Keymaps.
Some keys execute just an action.
Some keys may toggle a secondary Keymap in and out.
Some keys may SET the Override Map, which alters the action of the next overridden key pressed and then UNSETs itself. This next key can also SET another Override Map which extends the UNSET action.

With this you could setup infinitely nested Menues, just remember to print all shortcuts on a paper if schema doesn't implement a temporary-keycommands-list for the Overriden Keys via ingame widgets.
