Can someone please push me in the right direction here. Docking ships to my station is causing my station power to draw at 140%. Is there a way to prevent this?

There's no way to turn it off :-(
But you can set the power priority for Docks on the station to be lower so other systems on the station will get the power they need first.
Of course, this will cause power failures on the docked ships.
Open the Reactor panel on for the station (Default "Insert"), then switch to the priority tab, and move docks down the list to your liking.
