To answer some of your questions, der_scheme, I have two ATI Radeon HD 5800 graphics cards in SLI mode. Also, I have the occlusion cutting option set to off. However, I will be temporarily unable to test Starmade further due to my computer taking a dump in its pants.
Edit: Computer has changed its pants. I can now test any possible solutions.
