how do I change the default items in single player?

For some reason when the update to starting items came up in december, it didn't change my items. I realize this was 8 months ago, but I just started a new game and am trying to figure out how to make the switch manually. I've found info on how to do it for a server, just not in single player.

Edit GameConfig.xml in the install directory, or if it doesn't exist yet, copy and rename it from data/config/GameConfigDefault.xml

On Linux, I find it in Steam/SteamApps/common/StarMade/StarMade under ~/.local/share, so you'll want to check for another "StarMade" folder under the "Steam/common/StarMade" folder you described.
