Just wondering how to freely do this and not mess up things while doing so since it seems some servers are using different versions than others and in some cases I'm not able to log onto older versions but in other cases I am. o_O

First you should create a seperate installation to avoid problems between versions.
In the upper left corner of the launcher select: "Options">"Installation Settings"
    Now change the path.
For example my main installation: "C:\Users\<Username>\AppData\Roaming\StarMade\StarMade\"
    Secondary installation for dev-builds: "C:\Users\<Username>\AppData\Roaming\StarMadeDEVB\StarMade\"

Now you need to tell the launcher what version it should download.
Click on "Options & Repair" and in the upper half you should see the build switcher. Select the version and click on "Update and Install latest version"

    I think that should work

1: download whatever versions of the game You want.
2: start the launcher. On the first screen go to "Options" on the upper-left side.
    3: Click "Installation settings".
4: Choose the main folder of the version You want to run and hit "OK".
5: Business as usual; Hit "Start Game", and enjoy Your alternate version.
    6: ?
    7: Profit.
