Ram. This game gobbles it up. I want a server where it will most likely just be me and one other person working on one ship. These hosting sites have fancy hardware, but I need to know if that matters or if shear resources (amount of ram I am allowed access to) matters the most.

Realistically, how large of a ship can I build on 2 gigs of ram?

If the only thing on the server will be you and your partner, the server with 2GB RAM will be fine. The only limiting factor will be your PC's hardware.

What jorgekorke says [nice avatar btw ; )]
In my experience processor cores matter more than memory.
I'm running the server portion of StarMade on an ageing Core2Duo laptop with 4 GiB of RAM, 2 of which are set aside for the server process.
For a small community of one to three concurrent players, it doesn't break a sweat except when generating planets, due to its limited CPU.
