I have a suggestion for making planets more interesting that should be compatible with whatever shape they end up on: Setting the interior of the planet as a separate core with its own biome. That way there's more of a feeling of treasure hunting and sci-fi exploration when you start tearing off the surface of a planet in your massive excavator.
Some example biomes:
-Molten core, earth like, mostly lava blocks but with a rich mineral center.
-Cold hard rock
-Geode planet, big empty spaces and crystals
-Land of the lost, hollow and built like the surface of an alien planet, weird plants everywhere
-Precursor planet, a rare archeological find where the core is built out of starbase parts or a functional ship has been left behind.
