Yeah that works well. Though the big turret uses more power for the shots then it can generate on it's own after you undock it. I tend to remove some of the cannon modules to get it power stable.

Try using the old legacy Launcher. It just handles the startup of StarMade and the variables to use. Rather then move the game files everywhere.

CPU
StarMade is all CPU. It does not need lots of RAM. For big copies extra RAM can help but the CPU has to calculate it to. Once you hit copy on a big copy and your screen freezes then do not alt tab out. Just be patient it might still do the copy after a while.

Power drain needs power to function. It was used a lot some time ago and got nerfed. You need to scale it up to get better results. That said i never looked into how much power i gained in return. I was more focused on using it to drop my enemies power supply.
You want the fighter to take down a bigger ship? Against an opponent of the same size that damage is fine. Many use small fighters in fleets to destroy much larger targets. Some are notorious in doing so and feared by many.
